Rougamo is like a hamburger, with a crispy baked bun filled with various choices such as pork, beef, lamb, spicy pork, or shredded potatoes. This street food has a history of over 2,000 years, originating from the Qin Dynasty (the era of the Terracotta Warriors). It remains popular throughout China today.
Liangpi as a type of cold noodle also has a long history and is known for its soft, smooth texture with good elasticity and chewiness. It is widely appreciated for its unique taste and flavor. There are many varieties of Liangpi, with different preparation methods and distinctive seasoning styles, such as sesame paste Liangpi and chili oil Liangpi.
Hand pulled Biangbiang noodles are a traditional dish, named after the “biang“ sound made during their preparation. The noodles are made through a process of kneading, stretching, and pulling, resulting in wide, thick noodles with a chewy texture and rich flavor.
